PUMPKIN PICKING
Shannon and I were taking down that garden yesterday and decided to wait until today to pick the pumpkins with the kids , so they could all be there and have a say for the ones that they wanted ( we had exactly 6 so all the kids got one) However I woke up to SNOW this morning! YUCK!!! And double YUCK!!! Shanon came over right away so that we could get the pumpkins out of the garden before they froze. Kyah had a friend over and didn't want to go out in the weather so she isn't in any of these pictures( I teasingly told her that she wouldn't get a pumpkin then . That didn't get her out in it though ) All of the white spots that you see in the pictures are snowflakes. It is the beginning of October for heaven sake, It should not be snowing yet!

Chelsea was not happy to be out were it was freezing but she wanted her pumpkin to get inside pretty bad :)

My niece Sequoia was pretty stoked that we had a green pumpkin because that is her favorite color. I think I heard her say that she was turning it into a witch.

Larry brought his Machete to cut the stems for us and the tip was not as sharp as he thought. He broke off 2 stems with it. I don't care it got the job done and me back inside where it is warm.

1 butternut squash
1/2 c chopped onion (I used 2 T dried minced onion)
2 cans chicken stock (4 cups)
1/2 t marjoram
1/4 t ground black pepper
1/8 t cayenne pepper
8 oz cream cheese.
Cut squash in half and remove seeds. Brush with olive oil and place cut side down on a baking sheet and roast in oven 30 minutes at 350. Once roasted, remove from skin. You can do this several days in advance it that is easier.
Blend squash and cream cheese in blender or food processor until smooth.
Place in large pot and use whisk to combine with remaining ingredients, bring to a simmer, not a full boil and serve.
If you want this soup to be truly smooth, I would also blend the onions with the squash. You could even blend the whole lot up in your blender if you wanted!
Delicious! We served it with fresh bread and it was an awesome meal. I totally loved it. I think you could leave the cream cheese out, it just wouldn't be as rich.

How am I not surprised that Larry has a Machete. Sequoia sounds like a cool chick! And creative too.
Did I mention it's still *ahem* 80 degrees out here? *chuckle, chuckle*
